Mango fruit leather is one of those treats that feels indulgent
but is actually just pure fruit. No added sugar, no additives,
no preservatives — just ripe mango dried into a deliciously
chewy, sweet snack that kids absolutely love.
Why Kids Love Fruit Leather
Fruit leather has the same appeal as sweets — it's chewy,
sweet and fun to eat. The difference is it's made entirely
from real fruit with nothing else added. It's the perfect
swap for sugary snacks in lunchboxes, after school and on
long car journeys.
What You'll Need
- 3 ripe mangoes — the riper the better
- Optional: squeeze of lime juice to enhance flavour
- Ezidri FD1000 with solid sheets
How to Make Mango Fruit Leather
1. Preheat Ezidri FD1000 to 55°C
2. Peel mangoes and remove flesh from the stone
3. Blend until completely smooth —
no lumps remaining
4. Add lime juice if using and blend again
5. Lightly oil solid sheets with a neutral
flavoured oil
6. Pour puree onto solid sheets to approximately
4-5mm thickness — spread evenly with a spatula
7. Do not spread too close to the edges as the
puree will spread slightly during drying
8. Dry at 55°C for 10 to 12 hours until the
leather is no longer sticky and peels away
cleanly from the sheet
9. While still slightly warm peel from the sheet
and place on a piece of baking paper
10. Allow to cool completely then cut into strips
or roll up in the baking paper
Dryness Test
The leather should be smooth and pliable — not sticky
on top and not brittle. If the centre is still tacky
return to the Ezidri for another hour.
Storage
Roll in baking paper and store in an airtight container
for up to 2 weeks at room temperature or up to 1 month
in the refrigerator.
Tips for Best Results
- The riper the mango the sweeter and more intensely
flavoured the leather will be
- Frozen mango works brilliantly — defrost fully
and drain any excess liquid before blending
- Try mixing mango with a little pineapple or
passion fruit for extra tropical flavour
- Cut into fun shapes with cookie cutters for
younger children
