Fruit leathers are an excellent way to use up the abundance of fruit that summer brings. Here, we’ve used strawberries, but you could use any number of different fruits. Try apricots, apples, mango, blueberries or any combination.
They are the perfect addition to a healthy lunchbox and a great snack for any age when you’re on the go.
Ingredients
4 cups strawberries washed and hulled.
1 teaspoon vanilla extract.
1 tablespoon maple syrup.
1 tablespoon lemon juice.
Method
Place the strawberries into a high-speed blender and blend until smooth.
Pour the liquid into a saucepan and add the remaining ingredients.
Heat to a simmer and allow to cook for 10 minutes.
Cool the mixture and pour out onto the Ezidri solid sheet.
Dehydrate at 50ºC for 8 hours.
Peel the fruit leather off the insert and cut into wide wedges using scissors.
Roll each wedge up, starting from the wide end.
Store in an airtight container.
